Celebrate summer with these quick and easy veggie recipes!

June is all about fresh produce. Farmers’ Markets are open again and backyard gardening is in full swing. No doubt that’s why June is Fresh Fruit and Vegetable Month. And hardly a coincidence both Fresh Veggies Day (June 16th) and Eat Your Veggies Day (June 17th) take place in June. If somebody in your family is not into vegetables, check out my post How To raise a Veggie Lover. Or perhaps you simply need some veggie inspiration.
