Grab your spoons and enjoy the fireworks nibbling on this easy, creamy Fourth of July dessert.

This Fourth of July, skip the apple pie. I’ve started a new tradition in my family – light and healthy patriotic desserts. Some of my favorites are a delicious Stars and Stripes Cake and Red, White, and Blueberry Bites (check out my son’s How to Hull a Strawberry video). This year, I’m making Patriotic Yogurt Parfaits. Light because you make them with creamy Greek yogurt; healthy since you add multiple layers of luscious, fresh strawberries and blueberries. Really any red fruit (raspberries or watermelon) works well, but keep the blueberries! July is National Blueberry Month and the perfect time to enjoy these juicy, little blue beauties. Your family is going to get a bang out of these delicious parfaits. Serve them in fun parfait dishes with long spoons and let the fireworks begin! Patriotic Yogurt Parfaits

Makes 4 servings

Preparation Time: 15 minutes

Chill time: (optional)

Ingredients:

2 8-ounce cartons coconut-vanilla Greek yogurt (any white yogurt will do!)

2 cups fresh strawberries, sliced into bite-size pieces

2 cups fresh blueberries

4 parfait cups

Directions:

  1. Place Greek yogurt, strawberries, and blueberries in separate bowls
  2. Spoon alternate layers of red (strawberries), white (Greek yogurt), and blue (blueberries) into each parfait cup. Serve immediately or make ahead and chill in refrigerator.

Nutrition Information per Serving: 190 calories, 9 grams protein, 31 grams carbohydrate, 4 grams fat, 2 grams saturated fat, 11 milligrams cholesterol, 3 grams fiber, 36 milligrams sodium
