Craving a quick, cheap Mexican meal? Skip Taco Bell or Chipotle – they’re too greasy and make you feel bloated. My quick quesadillas are the ultimate healthy “fast food” and take less than 1 minute to make in the microwave. Trim calories even more by using reduced-fat cheddar cheese. And turn up the heat by adding jalapeños! Sometimes I toss in leftover chicken or fish. Top with your favorite salsa. Better yet, try my homemade salsa and guacamole.  Quick Quesadillas

4 Servings

 Prep Time = 10 minutes

Cooking Time = 1 minute

 

Ingredients:

  • 4 whole-wheat tortillas (8 inches in diameter)
  • ¾ cup shredded, cheddar cheese
  • 1 cup diced green peppers
  • 1 cup black beans, drained and rinsed

Directions:

  1. Top each tortilla with 3 tablespoons cheddar cheese, ¼ cup green peppers, and ¼ cup black beans. Fold each in half.
  2. Cook tortillas in microwave on high for 30 seconds or until cheese melts.
  3. Cut each in tortilla in half. Serve with salsa and guacamole.

Nutritional Information per Serving (1 tortilla): 250 calories, 15 grams protein, 39 grams carbohydrate, 4 grams fat, 2 grams saturated fat, 4 milligrams cholesterol, 8 grams fiber, 450 milligrams sodium
