Get crazy for cauliflower! This cheesy cauliflower casserole stuffed with sour cream, bacon, and chive tastes so fabulous nobody will miss the spuds.

Move over mashed potatoes and meet your rival. Cauliflower adds a healthy-ish dimension to this cheesy cauliflower casserole stuffed with sour cream, bacon, and chives. Cauliflower naturally provides fiber, B-vitamins, and sulfur-containing compounds called sulforaphane which studies suggest helps fight certain types of cancer. I prefer fresh cauliflower, but frozen florets work well too. Not a fan of fat-free products? Use the full-fat versions but take a smaller portion to help trim calories. Loaded Cauliflower Casserole

Cook Time = 30

Ingredients:

  • Nonstick cooking spray
  • 1 large head of cauliflower, cored and sliced into floret chunks
  • ½ cup olive oil mayonnaise
  • ½ cup reduced fat sour cream
  • 2 cups shredded cheddar cheese; divided use
  • 5 slices cooked uncured bacon, crumbled; divided use
  • ¼ cup chopped chives; divided use

Directions:

  1. Preheat oven to 425°F. Coat a 1 ½- quart baking dish with nonstick spray.
  2. Bring a large pot of water to a boil. Add cauliflower and cook about 10 minutes; drain and set aside to cool.
  3. While cauliflower is cooking, in a large bowl thoroughly mix together the mayonnaise, sour cream, and half of the cheese, bacon, and chives.
  4. Add the cauliflower to the cheese mixture and stir until well coated. Place everything into the baking dish and top with remaining cheese, bacon crumbles, and chives. Bake 20 minutes or until cheese is melted.

Nutritional Information per (1/2 cup) serving:196 calories, 9g protein, 6g carbohydrate, 16g fat, 7g saturated fat, 34mg cholesterol, 2g fiber, 332mg sodium, 2g sugar
