After a long, stressful day there’s nothing better than having a homemade dinner awaiting you on the table. It’s extra special when dinner is prepared by your daughter – thanks Jenny! My husband and I were treated to a Mexican fiesta featuring fresh pico de gallo. It was amazing! In honor of Cinco de Mayo, here is Jenny’s pico de gallo recipe, which I’ve also added to my iTunes app Time To Eat Healthy. Pico de Gallo

Prep Time = 20 minutes
Cook Time = 0 minutes
Ingredients:
1 pound tomatoes, chopped
2 fresh jalapeños, seeded and finely chopped
½ cup chopped onion
½ cup chopped fresh cilantro
1 avocado, diced
1 lime, juice only
¾ teaspoon kosher salt
Steps:
In medium bowl, gently combine tomatoes, jalapeños, onion, cilantro, avocado, lime juice and salt. Chill or serve immediately.
Nutritional Information per (1/2 cup) serving: 56 calories, 1 gram protein, 6 grams, carbohydrate, 4 grams fat, 1 gram saturated fat, 0 milligrams cholesterol, 185 milligrams sodium, 3 grams fiber
