Not only are they packed with nutrients like vitamin A, vitamin C, phosphorus and fiber; sweet potatoes are a low glycemic index food. That means they can help smooth out blood sugar highs and lows. This spicy sweet potato dip is the perfect party-pleasing app. To save time, make the sweet potatoes earlier in the day. Spicy Sweet Potato Dip

Prep Time =15 minutes
Cook Time = 45 minutes
Ingredients:
- 4 sweet potatoes, peeled and cut into 2-3 inch cubes
- 2 tablespoon chopped jalapeno peppers (seeded optional)
- 2 tablespoon finely diced yellow onion
- 2 tablespoon finely diced garlic
- 4 tablespoons chopped fresh cilantro
- 4 tablespoons olive oil
- Salt and pepper to taste (optional)
Directions:
- Boil water in a large pot. Add sweet potatoes and cook until very tender, approximately 25 minutes. Test with a fork.
- Preheat oven to 350°F.
- Drain and cool sweet potatoes for approximately 10 minutes and place into medium-size bowl.
- Add the jalapeno peppers, onion, garlic, cilantro, and olive oil, season with salt and pepper if using. Mix contents with electric mixer or mash by hand until creamy. Transfer to 1-quart baking dish.
- Bake for 20 minutes, serve with corn chips or your favorite veggie and enjoy!
