When you crave warm, creamy comfort foods, grab your slow cooker and simmer a batch of homemade split pea soup. Split peas pack a potent dose of protein, hunger-filling fiber, and heart-healthy antioxidants all for less than 300 calories a bowl. My go-to split pea soup recipe originally came from Taste of Home. While I love the ease of tossing the ingredients into a slow cooker, the salty flavor overwhelmed me. I recommend using low-sodium chicken broth and adding diced celery. Vegetarians feel free to leave out the ham and add low-sodium vegetable broth. Slow Cooker Split Pea Soup
Makes 8 servings
Prep Time = 15 minutes
Cook Time = 8 hours
Ingredients:
- 1 package (16 ounces) dried green split peas, rinsed
- 2 cups cooked, diced ham (optional)
- 1 large yellow onion, chopped
- 1 cup chopped carrots
- 1 cup diced, celery
- 4 garlic cloves, minced
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
- 1 (32 ounce) carton low-sodium chicken broth
- 2 cups of water
- 1 teaspoon coarse salt
Directions:
- In a large (4 to 5 quart) slow cooker or crock-pot add the split peas, ham if using, onion, carrot, celery, garlic, rosemary, thyme, chicken broth, water, and salt. Stir until well combined.
- Cover and cook on the low setting for 8 hours; high setting for 4 hours.
